Legend has it that Saint Denis had his head lopped off by pagan priests who were apparently miffed at his success in converting their ilk to Christianity. His lower jaw was said to be housed in the nearby monastery of St. Vivant, hence this vineyard's name. Here, deeper toned, somewhat meatier aromas of dark fruit and baking spice, orange peel, mint, and black earth lead to a finely tuned wine that, while still a baby, nevertheless reveals its its fine pedigree.
